Young, Skinny and Cheap Chicken

This recipe has it all; anti-aging ingredients, low fat and because you use leftovers, it’s cheap and good for the environment (I was going to put green in the title—but who wants green chicken!). Its perfect for those days when you find your fruit is just a little too ripe to munch on, but not so bad that it should be tossed out. What I love about this recipe is that it is never the same dish twice. You can use any kind of fruit and it can be fresh or dried. The pomegranate juice is not only tasty, but it is loaded with anti-oxidants.
Ingredients
6 skinless chicken breasts
2 ½ cups of fruit
(It can be any combination, like 1-cup strawberries, 1-cup peaches, ½ cup dried cranberries, make sure the fruit is thinly sliced)
2 cups of Pomegranate Juice
1 medium red onion chopped
Directions:
Pre-heat oven to 350 degrees
Wash and place chicken into pan
Slice fruit
Chop Onion
Combine together in a bowl then spread over chicken
Slowly and evenly pour juice over chicken
Cover and place into pre-heated oven
Cook for 45 Minutes covered
Remove cover and baste
Cook for another 15minutes Uncovered
